• Drive staff to exceed the budgeted check average on a daily basis
through training and incentives.
• Ensure that cost margins are maintained versus top-line revenue.
• Maintain awareness of Outlet(s) financial performance.
• Monitor breakage of chinaware and glassware and implement
strategies to reduce where possible.
• Make recommendations to the Outlet Manager for price and menu
changes that will enhance profitability.
• Communicates effectively all issues to the Outlet Manager in a timely
manner. Communicates with honesty and integrity to all colleagues
and customers (internal or external).
Conditions of
Work:
To work in a variety of Food & Beverage environments including indoor
and outdoor conditions, as well as exposure to smoky environments and
harsh variations in weather conditions. Some heavy lifting may be
required while on duty.
Role Overview
Purpose: • Assists the Outlet Manager to manage all aspects of a specific
Outlet(s) within the F&B department including the selection,
development, and performance management of colleagues,
optimizing profits, and increasing sales.
• Assists in managing scheduled shifts ensuring guest satisfaction.
• Assists in managing all operational issues ensuring JI & MJs
Standard Operation Procedures are met and value is added to the
F&B
• Presumes full responsibility for a specific Outlet(s) in the absence of
the Outlet Manager
Communication: • To ensure clear and precise communication with FOH colleagues at
all times. Maintain communication with the kitchen. Ensure that all
duties are completed in the absence of the Outlet Manager.
• Communicates effectively all issues to OM/GM in a timely manner.
Communicates with honesty and integrity to all colleagues and
customers (internal or external)
• Demonstrates leadership skills
Main Duties: • Hands-on operator that lives and leads the perfect guest
experience, ensures the team is set up for success and is
responsible for assisting the OM/ GM in ensuring that all colleagues
have full product knowledge.
• Closely monitors the cashiering function of the outlet to ensure
compliance with JI Cashiering Procedures.
• Monitors customer satisfaction and responds to customer feedback
and complaints ensuring JI & MJ procedures for CSI and Complaint
Classification: Internal
Handling is followed.
• Maintains & actively uses a database of customer details/ history
and other strategies that assist in guest recognition.
• Advises the Outlet Manager of any improvements needed in
relation to restaurants operation including updates to SOPs or
addition/ deletion of SOPs.
• Makes suggestions to increase the market share for the Outlet.
• Conducts performance evaluation of colleagues, training of
colleagues, guidance, coaching, and counseling of colleagues.
• Assists in ensuring that colleagues are aware of the relevance and
importance of their activities and how they contribute to the
department objectives.
• Assists in determining the necessary competence for colleagues
and providing training or other actions to satisfy these needs.
• Provides constant coaching, counseling, and discipline to colleagues
to ensure their capability to meet the needs of the customer and
the organization.
• Monitors the manning and competence level of selected colleagues to
ensure sufficiency for the department to meet the needs of the
organization and customers.
Administrational:• Support the Outlet Manager to implement the F&B marketing plan
when required.
• Ensure up-to-date hard copies of department SOPs are maintained
at all times.
• Acknowledge the receipt of new or amended documents through
Mercury in the absence of the Outlet Manager.
• Communicate new or amended procedures to relevant
departments/ colleagues in a timely manner, ensuring they have
been understood.
• Assist in controlling department forms and records according to the
JI standards for Document Control, including (but not limited to):
o Attendance data for colleagues
o Colleague records
o Daily Briefing Sheets
o Cleaning Schedules/ Checklists
o P&L analysis
o Budgetary reports
o Telephone Test Call Results
o CSI & Customer Feedback
o Assist in maintaining appropriate records of education, training,
skills, and experience.
Operational:• Contributes to the implementation of marketing activities in order
to achieve desired results.
• Attends & actively participates in the daily F&B briefings in the
absence of the Outlet Manager.
• Discusses menus, special requests, etc. with the chef
• Trains all colleagues in suggestive selling and up-selling techniques
to assist in achieving maximum profitability.
• Ensures opening & closing checklists are completed on a daily
basis.
• Monitors completion of weekly cleaning schedules.
• Supports the Outlet Manager to analyze results of Telephone Test
Calls, Mystery Shoppers, CSI, Complaint Forms, and IQRs and take the
action necessary to address any non-conformances within required
timeframes in order to set recognition or improvement strategies.• Conducts regular briefings and meetings to ensure all colleagues
receive the information necessary to perform their jobs.
• Develops and updates F&B knowledge of all colleagues on a regular
basis.
• Maintains a working knowledge of relevant sections within the JI
Food Hygiene SOP and assists the Outlet Manager to ensure the Outlet
meets these standards at all times.
Other Duties:
• Perform Micros format updates.
• Ensure that all furniture, equipment, utensils, and silverware used
in the outlet are accounted for, properly handled and serviced, and
maintained to prevent excessive wear and tear.
• Attend & actively participate in daily & weekly Food and Beverage
Briefings/ meetings.
• Attend to any other tasks defined by the F&B or Senior
Management.
• Conducts weekly uniform audits to ensure the highest standard is always
met.
• Assists GRE’s in their task of tab/sent maximization through proper
seating philosophy and reservations management.
